You can change the monitoring interval by changing the options in oned.conf:

Monitoring has changed in 4.0. Version 3.8 and earlier had separate
options, HOST_MONITORING_INTERVAL and VM_POLLING_INTERVAL, to specify
different intervals. However I believe newer version only have a
general MONITORING_INTERVAL option.
